Coconut Date Overnight Oats

This week I’ve really jumped into gear with my cooking and being better about not eating out. However, I was struggling with healthy easy, on-the-go options. I found this recipe on MyWholeFoodLife.com and was inspired to try it. So last night I took the recipe and added my own flair to it by adjusting some of the ingredients – and this morning it was soooo delicious I was surprised at how much I liked it.

Then all I did was mix it together well in my bowl, put the lid on it & put it in the refrigerator. Then this morning, I took it out – mixed it again added 2 strawberries and headed out. You can add the strawberries in before, but I wasn’t sure how that would turn out. Anyways in the end it turns out to be approx. 215 calories, easy and delicious… so I call that a winner!
